Who’s *NOT* on vacation? ME. Nope. Not bitter at all. Nobody tells you that vacation planning gets more complicated when you have children to contend with (schedules! classes! complexity of flying!) — excuses, excuses. What a fail. But I’m not on vacation so I have to blame something tangible…
What’s a busy mom to do? Eat like I’m on vacation. Like a fool. Drink that icy cocktail up. Toast that coconut.
And start chopping peaches. And tomatoes.
That’s right folks. Nothing says vacation like chips and dip. But that dip had better have a tropical flair. And it’d best be healthy too (since you’ll hopefully be eating it while rocking a swimsuit in your own backyard…)
And if it’s not quick with no drama… well then just forget it and spend your time inside.

Peach & Tomato Salsa. The short instructions? Chop up a few peaches, a few tomatoes, a red onion, a handful of parsley. Mix together with salt, pepper, lemon juice and olive oil to taste and toss into the fridge for a few hours to chill.
Dip your chips and crunch away… or top grilled chicken with it on a bed of greens (fancy).
(Don’t forget to pour yourself a glass of wine.)
