Argggggg. DINNER. The word itself can be exhausting. I feel like I’m always in a rut. Not fab. So here’s something I threw together in a fit of desperation. CRUNCHY QUINOA (ok, only the celery’s crunchy). This is fit+healthy (protein!), fancy-foodie-like (feta cheese!) and takes about five minutes to throw together (minus the quinoa cooking-part, that is). Can be a side dish, or add some grilled chicken and BAM! you’ve got a meal. It works great to keep around for lunches too. Fabulous.
INGREDIENTS:
Cooked quinoa, cooled or hot (the box has instructions for how to cook)
Chopped celery
Canned garbanzo beans (drained and rinsed)
Crumbled feta cheese
Chopped parsley (optional)
Salt, Pepper, Olive Oil & Vinegar (to your taste)
Toss everything together. Eat. Fabulous. (No guarantee your kids will like the feta flavor… this one’s more of a ‘for busy moms only’ dish.)
