Any day after Wednesday gets me baffled about what to make for dinner, mostly because it’s slim-pickins’ at my house round that time of the week. But in true make-it-work-people fashion, a fab mom can figure it out. So here’s what I tried for my testy toddlers on a whim. It worked! (They ate it.)
Reminder: I am NOT a chef, but I do know my way around a kitchen. My latest fabulous Fast-Food solution: BACON+PEAS PASTA.
What you’ll need:
Pasta (any kind), Frozen peas (any kind), Tomato sauce (1 or 2 8oz cans, depending on how saucy you like your pasta), Olive oil, Bacon pieces, Garlic salt (or regular salt), Pepper, Basil.
Cook frozen peas according to instructions, set aside. Boil pasta according to package instructions, set aside (BUT: before draining pasta, scoop out some of the starchy water in a coffee mug and set aside). Once pasta is drained (and still set aside in the strainer), dump the following into the big, still-hot pot that you previously had your pasta cooking in and mix together: approximately a 1/4 cup of that starchy water you scooped, a few tablespoons of olive oil, 1-2 cans of plain tomato sauce, salt+pepper+basil. Add drained pasta back into pot (now with sauce) and mix. Add peas and bacon pieces according to how much you like of each. Enjoy! (I’d have added parmesan cheese on top, but it was especially slim-pickins that day.)
My secret? I use pre-packaged bacon pieces. That’s what I call FAST FOOD.
